Sweet Potato Chips
2 large sweet potatoes 2 teaspoons coconut oil (optional) ¼ teaspoon sea salt ¼ teaspoon garlic powder ¼ teaspoon cumin ¼ teaspoon paprika ¼ teaspoon chili powder ⅛ teaspoon cayenne (optional)
Preheat the oven to 250°F. Slice the sweet potatoes into very thin slices approximately, or very thin strips resembling french fries. Place the sweet potato slices into the boiling water and return to a simmer over medium heat. Boil potatoes until they are soft, drain water.
Combine the sea salt, garlic powder, cumin, paprika, chili powder, poultry seasoning, and cayenne in a small bowl. Lightly grease two baking trays with coconut oil or use nonstick paper. Arrange the sweet potato slices on the trays so that they are not overlapping. Add your spices.
Bake the sweet potatoes until desired crispyness ( usually about 25-30 minutes depending on your oven.) Flip chips or fries as desired.
