Yes, we are at it again.
Have I ever mentioned I love sweets? I mean, I do. Anything to satisfy my love for yummy goodies without wrecking havoc on my GI tract and waistline( and skin and mood, and well, YOU KNOW)
I sometimes wonder if the love of creating these recipes brewed from the fear of never being able to eat them again?- Or the countless times I was at a gathering or awkward situation not being able to eat something everyone else was enjoying just fine. Im not sure, either way, Im not complaining and neither is my gut.
This yummy concoction contains chickpeas. Getting legumes is an incredible source of lysine, Iron and B6 which are so important when you are eating a plant based diet.
HINT. You should probably just double this.
Ingredients:
1 can of organic chickpeas
2 cups of organic gluten free oats
1 and 1/4 cups of organic coconut sugar
1 tsp of salt to taste
1 tsp of aluminum free baking powder
1 tsp of baking soda
1/4 cup of chia seeds
3-4 dates
1 tbsp of vanilla
1 bag of chocolate chips (depending on food allergy and preference, this is your choice of chocolate chips.)
Directions:
Preheat oven 275 degrees.
Add 1/4 cup of chia seeds to 1/2 cup of water stir and set aside. Drain your can of chickpeas. Rinse. Set aside.
In a high speed blender, blend your 2 cups of oats to a flour consistency. Add to a large mixing bowl. Add your coconut sugar, baking soda, salt, and baking powder. Stir well.
In the blender, blend your rinsed chickpeas, vanilla, dates and soaked chia seeds. Blend until smooth.
Add wet ingredients to dry ingredients. Stir. Add water if needed. Add chocolate chips ( a whole bag, two bags, whatever your heart desires.
* Hint if you add too much water, add in additional chia seeds. The consistency should be a bit runnier than traditional chocolate chip cookies.
Add mix to an un-greased baking pan.
Bake at 250 for 15-20 minutes until brown on top. Each oven may bake differently.
